Irish Dublin Coddle
Sausages, rashers (bacon strips with fat). Onions, potatoes, and a packet of vegetable soup (or if u wish you're own home made veg soup).

BE warned this does sound weird, but adults and kids alike love this warm and comforting food.

In a large saucepan (4 litre capacity) or more place you're sausages ( at least 4 per person). Roll up the rashers (bacon strips) into a roll (again 4 per person) place them into the saucepan. Slice you're onions into very thin rings and add to saucepan as well (about two onions will do (normal hand size). Add at least 3 litres of water and bring everything to the boil. Simmer for at least 40 mins at low heat. Add peeled raw potatoes (about 3 per person/ they do disentegrate some). Add another litre of water (hot or cold depends on you're hurry)!! Cook for another 30 minutes (it does continue to cook while standing off the heat at this stage). Add veg soup if packet ( cook for another 10 mins at very low heat). If adding a veg packet 5 mins should do.

serve in large deep bowls (as for stews or soup).

This was a great way to feed all the family from the one pot (no other utensil required!!)HINT! (when you are serving you can still give an individual his preference e.g No rashers, No sausages, just flavour !!
