Zucchini Bread
2 cups grated zucchini
3 eggs (beat until frothy)
2 cups flour
1 tsp cinnamon
2 cups sugar
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
1 cup walnuts or raisins (optional)
Mix together all ingredients, place in 2 ungreased bread pans. Bake at 350 for an hour or until done. (Test with butter knife, insert in middle, when it comes out clean, the bread is done.) |
