Marlborough Pie CRUST
1 cup all-purpose flour
4 tablespoons unsalted butter (cold and cut into 1/2 inch pieces)
1 egg yolk
pinch salt
1 tablespoon lemon juice
FILLING
1 cup applesauce
1/3 cup sugar
3 eggs
1/2 cup butter
CRUST Measure the flour into the bowl, add the butter and place into the freezer for 10 minutes. Beat the yolk with the lemon juice and place into the fridge. Keep a few tablespoons of ice water in the fridge too. Mix the flour and butter (this is the traditional cutting in) and after about a minute the mixture will look like oatmeal or flattened bread crumbs. Add the yolk mixture and continue to mix. If needed add some of the ice water. Stop mixing exactly as the dough looks like it's about to clump (if it already has you've gone too far). Remove the dough and form into a fat disc shape and place in a plastic bag and refrigerate for about 20 minutes. Take the disc out of the bag and place on a floured surface. Sprinkle both dough and rolling pin with flour and roll out fairly thin. Place into your pie tin and edge in the manner you prefer. To pre-bake, pre-heat the oven to 400 degrees. Place the pie tin onto a baking sheet, line the pastry with foil and fill with dried beans. Bake for about 15 minutes. Then remove the foil and beans and place foil over the edges so they don't burn and bake for another 10 minutes or so. Pastry should be barely colored. FILLING Place applesauce into a bowl and pour sugar over the top and mix well. Beat eggs till light. Cream butter till soft and then add the eggs, blending well. Stir butter and egg mixture into sweetened fruit. Pour into pie crust. Bake 15 minutes at 400 degrees then reduce heat to 350 degrees and bake for about 45 minutes. A knife inserted into the center should come out clean. Cool before serving. SUBSTITUTIONS You could use the flavored applesauces that are now on the market to create a different flavor, but I haven't tried any of them yet. There are also alternate recipes for Marlborough Pie where people have added raisins and nuts. |
