Mini Cheesecakes
2 packages softened cream cheese
1/2 cup sugar
1 can pie filling (any kind)
vanilla wafers
2 eggs
1 tsp. vanilla
Preheat oven to 375 degrees. Place liners in muffin tins and place one vanilla wafer in the bottom each. Slowly blend cream cheese, eggs, sugar and vanilla. Fill tins 2/3 full. Bake 15 minutes, let cool for 1 hour, then chill. Put 1 tsp. of pie filling in each. |
