Rhubarb Upside Down Cake 1 box yellow cake mix 1-3 cups cut rhubarb 1 cup sugar 1 cup cream or evaporated milk Prepare cake mix according to directions on the box. Place in a pan that has been greased. Sprinkle rhubarb over the top. Sprinkle the sugar over the top of the rhubarb then pour the milk/cream over the top. Bake at the designated heat until a toothpick comes out clean.
