Stella's Raisin Filled Cookies Filliing:
1 1/2 cup raisins
1/2 cup sugar
1/2 cup water
2 Tbl. lemon juice
Dough:
1/2 cup margarine
1 cup sugar
2 eggs
2 Tbl. thick cream
1 tsp. vanilla
2 1/2 cups Gold Medal flour
1/4 tsp. baking soda
1/2 tsp. salt
Cook all filling ingredients slowly, stirring occasionaly until thickened (about 5 minutes).
To make the dough:
Mix thorougly the margarine, sugar and eggs.
Add the cream and the vanilla.
Sift together the flour, baking soda and salt and stir into the dough mixture.
Chill dough.
Roll out very thin on a floured board. Cut 3" rounds or squares. Place on lightly greased baking sheet. Place a rounded teaspoonful of filling on each round. Fold over, like a turnover, pressing edges together with floured tines of a fork, or with the tip of your finger.
Bake at 400 degrees until browned slightly.
