Carrot cake 2 cups brown sugar
4 eggs
1 1/2 cups vegetable oil
2 tsp. baking soda
1 tsp. salt
2 cups flour
3 tsp. cinnamon
2 tsp. vanilla extract
3 cups grated carrots
For the icing:
1 8 ounce package of cream cheese (e.g. Philadelphia)
1 lb. powdered sugar
2 tsp. vanilla extract
1/4 lb. butter
Cream sugar and eggs. Blend in oil. Sift dry ingredients, and add to creamed mixture. Blend in vanilla. Fold in carrots. Bake in square, greased, and floured 9" x 13" pan at 325°F for 50 - 60 minutes.
Icing: Cream softened butter and powdered sugar, add vanilla and cream cheese. |
