Fruit Pudding
2 cups toasted bread cubes (1/2 inch)
1/2 cup dried apricots (finely chopped)
1/4 cup dates (finely cut)
1 tablespoon maraschino cherries (sliced)
2 cups milk
2 eggs (beaten)
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
1/4 cup coconut (shredded)


Combine bread cubes, apricots, dates and cherries in a greased casserole dish. Combine milk, eggs, sugar, salt and vanilla. Pour egg mixture over bread and fruit. bake at 325 degrees F. for 45 min's. Sprinkle coconut over top and continue bakeing for 15 min's longer, or until done.
